Recipes - Baking - Hot Cross Buns



Ingredients:

500 ml Cake Flour
8 ml Instant dry yeast
5 ml salt
30 ml castor sugar
5 ml ground cinnamon
7 ml mixed spice
30 ml butter
185 ml warm milk
1 small egg - beaten
80 ml raisins

Dough for the cross:

65 ml Cake flour
5 ml castor sugar
38 ml water


Method:

Sieve the flour, instant dry yeast, salt, castor sugar, ground cinnamon and
mixed spice in a mixing bowl. Rub the butter throught the flour mixture using
your fingertips. Add the milk, egg and raisins and then mix.
The dough must have a sticky consistancy. If the dough sticks to your
fingers, add a bit of flour. Knead the dough for 5 mins with your hands until
it is pliable.

Place the dough in a lightly greased large bowl and allow to rise for 45 mins.
Placing the dough in a warm place will help the process. Remove the dough from
the glass bowl and place on a floured work surface.

Heat the oven to 180C. Knead the dough again for 3-5 mins, make evenly sized buns
and place on a greased baking tray. Allow to rise for a further 20 mins

To make the cross, mix the flour, castor suger and water. Use a pastry bag or
plastic packet with a small hole in the corner and pipe a cross onto each bun.

Bake for 15 mins, or till done, and serve with butter.

Makes 8-10 buns.
